Simple Is So Good: Cranberry x Cashew x White Chocolate Biscuits

I've had Liam Charles' cookbook Cheeky Treats for a while, but a lot of the recipes are fairly involved and I haven't found the right occasion to make one of his fancy cakes yet. However, there is a chapter in the book titled "Simple" with some easier recipes, including his "Cranberry x Cashew x White Chocolate Biscuits." They're slice and bake sablés that come together in a few minutes, although you do need to plan for at least an hour of chilling time before baking.

You make the dough by creaming softened butter with sugar and vanilla; and adding flour, toasted cashews, dried cranberries, and white chocolate. I used a 50-50 mix of Cacao Barry Zéphyr white chocolate and Callebaut Gold caramel white chocolate pistoles. I formed the dough into a log and chilled it for a day before slicing the dough into cookies and baking.
I loved these cookies so much. The bottoms of the cookies became golden brown, crispy, and had an almost caramelized flavor. The cookies were sturdy, buttery, and chock full of milky and caramel-y white chocolate and crunchy nuts -- but my favorite part was the sharp and chewy cranberries. I used whole dried cranberries from nuts.com, which are super plump and very flavorful. This recipe was so easy but the end result was outstanding.
