Baked Sunday Mornings: Oopsy Daisy Cake

People often ask me, "What is your favorite thing to bake?" I've never had an easy answer to this question. I do so much baking and there are so many recipes I love -- I could never narrow it down to just one item. But I can identify the general category of baked goods that I find most rewarding: layer cakes. Something about a layer cake brings such joy and delight, and an amazing cake has the power to transform an ordinary occasion into a celebration. In large part, my layer cake repertoire consists of recipes from Baked, Baked Explorations, and Baked Elements -- I never met a layer cake from Matt Lewis and Renato Poliafito that wasn't spectacular. And this week's Baked Sunday Mornings recipe, the Oopsy Daisy Cake, is no exception.

I don't have a lot to say about the cake in this post, because this is not the first time I've made it and I blogged about it at length before (you can read my previous post here). I was all too happy to have an excuse to make it again for Baked Sunday Mornings -- the chocolate cake is deeply flavorful, with a feathery-light, tender texture and superfine crumb. The rich vanilla peanut butter buttercream and peanut butter filling are both so good and positively decadent.

This was the first recipe I tried from Baked Elements and it is as good as any of the other layer cakes from the Baked cookbooks -- which is to say that it is exceptionally delicious.

Absolutely beautiful (again)-- I love your swirl on top, and I can't believe how *perfect* your cake slice is! I loved this cake too, and I agree that you just can't beat a BAKED layer cake. :)
