What's the Difference Between a Cinnamon-Sugar Cookie and a Snickerdooodle?: Pan-Banging Snickerdoodles

Sarah Kieffer's book 100 Cookies includes two recipes for snickerdoodles -- a regular version and a pan-banging version. I decided to try the pan-banging one. It's actually identical to her pan-banging sugar cookie recipe, except that the snickerdoodles include nutmeg and are rolled in cinnamon-sugar before baking, while the sugar cookies are rolled in plain sugar. To make the batter, you beat room temperature butter with sugar until light and fluffy; add an egg and vanilla; and incorporate the dry ingredients (flour, baking soda, salt, cream of tartar, and freshly grated nutmeg). You form the dough into balls (I made a batch and a half of dough, which yielded 11 cookies formed with a #12 scoop, plus four cookies formed with a #16 scoop), roll them in cinnamon-sugar, and bake them on foil-lined baking sheets, banging the pan periodically during the last half of the baking time. Wafer Thin and Extra Crunchy: Almond, Pistachio and Sour Cherry Wafers

I can't believe that it's taken me almost three years to try the recipe for "Almond, Pistachio and Sour Cherry Wafers" from Sweet by Yotam Ottolenghi and Helen Goh. I love almonds. And pistachios. And dried sour cherries. And crunchy cookies. Better late than never! These cookies are wafers that are shaped by pressing the dough into a loaf pan, chilling it, and cutting it into very thin slices before baking. While the dough is completely straightforward, you need to plan ahead to allow for the dough to firm up in the fridge or freezer, and I do think there's some finesse required to slice the cookies evenly and as thin as possible. To make the dough, you sift together flour, baking soda, cinnamon, and salt; pour in butter, dark brown sugar, and water that has been cooked until the sugar has dissolved; and mix in whole almonds, pistachios, and dried sour cherries. Mix, Press, Bake, and Slice: Double Ginger Shortbread

I'll make just about anything with ginger, but the reason I decided to try Helen Fletcher's "Double Ginger Shortbread" was the pan she recommends for the recipe: a 13-inch by 4-inch rectangular fluted tart pan. I own this exact pan but rarely get to use it, so I was happy to be able to put it to use. (If you don't have this pan -- which I would assume would be the case for most folks -- you can just bake the shortbread in a 8-inch square pan. Or you can double the recipe and bake it in a 13-inch by 9-inch rectangular pan, which is what I do with David Lebovitz's Ginger Crunch recipe that he bakes in the same rectangular tart pan.) Around Thanksgiving, I stocked up on fresh cranberries without having a solid plan for how I was going to use them. I know you can freeze cranberries, but freezer space is always at a premium at our house. So I looked for some fresh cranberry recipes and decided to try Karen DeMasco's Cranberry Spice Cake . I've made a lot of cakes and desserts with fresh cranberries, and I don't think I've ever made one that uses finely chopped cranberries -- but this recipe calls for cranberries (fresh or frozen) that have been run through the food processor. Other than that, the recipe is straightforward. You combine flour, baking soda, ground cardamom, cinnamon, and salt in one bowl; combine sugar, dark brown sugar, oil, eggs, lemon zest, orange zest, sour cream, and vanilla in another; alternately add the flour mixture and apple cider to the sugar mixture; and fold in the chopped cranberries. Caramel Through and Through: Black Tea Blondies with Caramel Swirl

I don't type out recipes in my blog (I mean, I'm an attorney, so there is that whole copyright thing), but I do try to link to websites that have reprinted recipes with the author's permission. Sometimes the recipes are reprinted in very random places. When I made Benjamina Ebuehi's Lemon, Ricotta, and Thyme Mini-Loaves , I found a copy of the recipe printed in the Minneapolis Star Tribune . But that find included a real bonus, because the Star Tribune printed several other recipes alongside it, including one for "Black Tea Blondies with Caramel Swirl" from from Tartine: A Classic Revisited . I still had some Earl Grey tea leftover after making Yossy Arefi's Chewy Earl Grey Sugar Cookies and the idea of combining tea and caramel seemed so intriguing, so I had to give the recipe a try. Baked Sunday Mornings: Marshmallow Chocolate Cups

I have never had a real Mallo Cup , but I am a big fan of the various marshmallow-filled chocolate treats that are widely available around Easter (in the off season, I like getting my fix from See's scotchmallow chocolates, which consist of a layer of honey marshmallow on top of layer of caramel, covered in dark chocolate). So I was thrilled to see Marshmallow Chocolate Cups on this week's schedule for Baked Sunday Mornings . These cups are pure chocolate shells filled with homemade marshmallow. The chocolate shell is two parts dark chocolate to one part milk chocolate. I used 500 grams of 72% chocolate and 250 grams of 33% milk chocolate -- so I think that if I had simply used 750 grams of 60% chocolate, I would have ended up with exactly the same result. A friend kindly invited us to his family's Thanksgiving dinner last year, and their Thanksgiving meal is serious business -- the amount of planning and effort that goes into its high-level execution is remarkable. I offered to bake something and decided to make Caramel Apple Tartelettes and a Pumpkin Tart with Cranberry-Pomegranate Glaze . The tartelettes came off without a hitch. The pumpkin tart seemed straightforward. There's a graham cracker crust (graham cracker crumbs, sugar, melted butter, and salt) that you press into a tart pan; bake until golden; and sprinkle with chocolate that you melt and spread into a thin layer. I own a lot of fluted tart pans, but I often use straight-sided cheesecake pans with removable bottoms for tarts with crumb crusts because the absence of nooks and crannies generally makes it easier to remove the tart from the pan. Heirloom Elation : Apple Brownies

One of my friends makes the most delicious apple pies. Not only has he mastered the art of a flaky crust, but he also goes out of his way to get great heirloom apples. I have access to a lot of different apple varieties at farmers markets here in DC, but there are some types he regularly uses that I have never seen in this area. This year my friend generously shared with me several varieties of apples that he brought back from Charlottesville: Albemarle Pippin, Arkansas Black, Esopus Spitzenburg, and Ashmead's Kernel. Of those, all of them were new to me except for Arkansas Black. I decided to use some of the Albemarle Pippins (along with some Calville Blancs I still happened to have on hand) to make Amy Traverso's " Apple Brownies ." It's Spiced, All Right: Spiced Persimmon Cake

I love persimmons (both varieties), but rarely eat them here on the East Coast. They're not always easy to find around here, especially the Hachiya variety, which seem to be more scarce in this area compared to Fuyu for some reason. By contrast, whenever I visit my parents in Los Angeles during the winter, they typically have an ample supply of persimmons on hand. I never eat more fruit -- so many delicious, varied types of fruit, at every single meal -- than when I'm staying with my parents in California. My mother makes her own dried persimmons, and I whenever I can get my hands on some of these flavor bombs, they are a prized treasure. I had never used persimmons in a baking project before, but the photo of Claire Saffitz's "Spiced Persimmon Cake" in Dessert Person was irresistable. Ugliness is Next to Tastiness: Peanut Butter Parcels

I was tooling around the internet looking for a recipe to use up some extra buttermilk I had in the fridge when I came across a recipe for " Peanut Butter Parcels " on the King Arthur Flour website. The recipe is supposed to be a homemade version of a Drake's Funny Bones, a devil's food cake with peanut butter creme filling and chocolate frosting. I have never tasted a Drake's cake of any sort -- growing up in Nebraska, my snack cake of choice was the Dolly Madison vanilla Zinger. Thus, I have no idea what a Funny Bones is supposed to taste like. But the recipe looked promising, so I figured it was worth a try. You bake the chocolate cake component (butter, sugar, vanilla, eggs, cocoa powder, flour, baking powder, baking soda, salt, and buttermilk) in a 9-inch by 13-inch pan.
